Gian Gapan and Edwin Choi first went into business together in 2011 in the beauty industry — long before specialty coffee was on their radar. It was the community they built through business, and the ritual of sharing a great cup, that eventually pointed them toward something more meaningful.
In November 2021, they opened 727 Coffee & Co. in Subic Bay — a Japanese-inspired specialty coffee café that quickly became a beloved local landmark. The success of 727 wasn't just about the coffee. It was about the experience of slowing down, the curated environment, and the idea that a café could be a sanctuary.
By early 2024, they were ready to expand. Clark Global City — the buzzing heart of Pampanga's modern commercial district — was the destination. And this time, the inspiration was Scandinavia: the land of coffee culture's third wave, where beans are sourced with intent, roasted with care, and brewed with purpose. 717 Coffee & Co. was born.
